Another of my own original recipes, Healthy Ham and Potato Soup! It's very good, very easy and quite healthy!
Healthy Ham and Potato Soup
1/2 large Onion chopped
4 Cloves Garlic minced
2 stalks Celery chopped
3 Tablespoons Olive Oil
1 cup Carrots sliced
1 large Potato diced
1 pound cubed smoked ham
4 14-ounce cans low sodium chicken broth
1/2 teaspoon Onion Powder
1/2 teaspoon Garlic Powder
2 teaspoons Dried Parsley
1/2 teaspoon Lemon Pepper
1 8-ounce package Frozen French Cut Green Beans
Pepper to taste
In stock pot, saute onion, celery & garlic olive oil. When onions become transparent, add cubed ham.
Add Chicken broth, carrots and potato. Add seasonings and simmer for 30 minutes. Add frozen green beans, simmer another 10 minutes and enjoy!

how funny you should post this today, as i made ham and potato soup for lunch (the less healthy version with milk, flour and butter added...but at least i used 1% and smart balance :)
your recipe looks tasty too...ill have to give it a try next time. Thanks for sharing...i guess it was a potato soup kind of day :)
